TGIF! It was such a pretty day here in the Carolinas. The weatherman announced that our fall weather is here to stay. I hope to take a trip to the mountains soon to see the beautiful colors on all the trees. (Hint, hint, Devin!)
For a snack today, I decided on a small bowl of vanilla yogurt with 1/3 cup Kashi cereal. It hit the spot and kept me satisfied throughout the afternoon.
I made a quick run up to Trader Joe’s this afternoon to pick up a few essentials – romaine, spinach, crumbled goat cheese – plus I picked up a pre-made bag of whole wheat pizza dough. I figured the rest of the veggies could wait until Sunday. At least now I can have a salad … with carrots!
The whole wheat pizza dough was something that I’ve been wanting to try out. I have heard from friends that it is really good. I separated the ball of dough into four smaller balls, to make four individual sized pizzas.
While I made dinner, I sipped on a glass of white wine. I haven’t had wine in awhile, so it was very refreshing.
Ok, here we go … tonight’s creation is:
Roasted Butternut Squash and Tomato Pizza with Figs, Goat Cheese & Toasted Walnuts
What I used to make it:
- Whole Wheat Pizza Crust
- Sliced Garden Tomatoes
- Roasted Butternut Squash
- Chopped Figs
- Mozzerella Cheese
- Goat Cheese Crumbles
- Walnut Pieces
I pre-baked the individual pizza dough for 8 minutes at 425 degrees. (I put the two extra in a plastic bag in the freezer for the next pizza night!)
Next, I added the toppings as listed above and popped back in to oven for about 10 minutes, plus a few minutes until the broiler. Just make sure to watch it …
It was a great pizza! Pizza is another one of our favorite foods – healthy style always and always so good!
We also had a spinach and carrot salad with a pinch of broccoli slaw -
Time for a movie! I think I am going to make Devin suffer through a chick flick. Hee hee. We have Fool’s Gold (Kate Hudson and Matthew McConaughey) from Netflix and I’m in the mood for it.
Tomorrow morning I am going for a good run. I am craving it and it will be good to get out into the cool fresh air. It’s also a weight training day, but I will probably try to squeeze that in later in the afternoon.

I have used the Trader Joe’s pizza dough and couldn’t get it crunchy or “done” enough so I was thinking on Saturday that I would pre-bake it! Great job you and that looks lovely – now I know it works. I’m in NC and we are headed up to the mountains in a couple of weeks…this weekend was just too perfect!
