Halloween Happenings

Happy Halloween!  Happy Birthday, Dad!

I am really enjoying my time in Oklahoma!  It’s been so nice to sit back and relax, all while spending time with two of my favorite people … my parents! 🙂

 

We did a lot of running around this morning … nothing too exciting, just putzing.  It was what Dad wanted to do though, so that was just fine with me.

I will quickly catch you up on all of our great eats …

Last night I made a fantastic Veggie Pizza

The toppings included diced tomatoes/tomato sauce base, onion, green pepper, mushrooms, zucchini, broccoli, cheddar and Parmesan cheeses … it wasn’t completely veggie since I also added Canadian bacon slices.  I LOVE PIZZA!  Could eat it all the time!

We also had a spinach and veggie salad on the side –

 

My mom and I ended the evening with a great soak in their hot tub, star-gazing.  They live just outside of the town of Edmond – just far enough out to enjoy the rural pleasures (i.e. dark, clear skies), but still close enough to all the conveniences of city life.  To them, it’s perfect!  To me, well, it’s nice and peaceful, but I can’t imagine living without high-speed internet!  Ha!  How life can differ?!

Our eats for the day were all very fall-themed.  We started out with Pumpkin Oats for breakfast –

Topped with Grape Nuts for a little crunch and raisins.

That held us over for most of the day, so we decided on a spinach salad for lunch –

Topped with shredded chicken, broccoli, carrots, celery, chopped apple, raisins and sunflower seeds.  Mmm good!  I LOVE SALAD!  (We ate lunch out by the pool … ahh!  Did I mention that it was 80 degrees here today?!!)

To celebrate the holiday and a birthday, I made Stuffed Acorn Squash for dinner –

I will post the recipe one day next week when I get back home.  For now, here is everything that went inside:

  • Chopped onion, celery, green pepper and mushrooms
  • Quinoa
  • Shredded chicken
  • Mashed squash
  • Chopped walnuts
  • Sprinkle of Parmesan cheese

It was quite tasty and VERY filling!  I forgot about the quinoa cooking, so it was a little overdone and lost it’s trademark crunch that I love, but it was still very good … and healthy!  Gotta love that! 🙂

 

Now, don’t laugh at this next picture!  I had roughly one hour to put this beauty together while my dad was out running errands this afternoon –

Don’t you love the walnut letters?!  The flavor of the cake was pumpkin spice with cinnamon cream cheese frosting.  I used one box of reduced sugar vanilla cake mix, one can of pumpkin, one egg white, 2 tbsp. water, plus 1 tsp. each of cinnamon, nutmeg and vanilla.  No oil at all and super moist!

Trip To Town

Hello!  We made a big trip “into town” today for lunch, some shopping and a chance for me to blog at a speed faster than the snail’s pace that I encountered last night!  I swear it took me an hour to upload the few pictures that I had from yesterday!  Can’t handle that … grr!

This morning I made breakfast from the few ingredients my parents had on hand.  It turned out to be quite tasty …

Eggs ‘n Ham Oats

Quite tasty!  We are making a stop at the grocery store today so I can pick up ingredients for Pumpkin Oats and Tropical Oats … they want to try them all! 🙂

 

For lunch today, we headed to Panera (free wi-fi!) and I ordered the Orchard Harvest Salad, with ff Raspberry dressing on the side and a whole grain baguette

The Grand Reveal

Hello everyone!  I hope it’s been a great day!  So, I hinted this morning that I had some tricks up my sleeve and I’m finally ready for my grand reveal …

Ok, ok!  I will fess up …

I spent the day between airports and airplanes!  I’m in the great state of Ok-la-homa!  Yep, you read that right.  I flew out this morning for a long overdue visit with my parents.  Yeah!

The reason that I wasn’t able to mention this trip earlier is because I was surprising my dad, whose birthday is on Friday.  (He’s a Halloween baby!)  He is a blog reader, so I had to make sure no hints were given.

I got him good … he was completely shocked!  A great birthday surprise.  🙂

 

I’ve never lived here personally – they moved out here about 11 years ago.  It’s been over a year since I’ve seen them, so I am over-the-top thrilled to be here!

I will be doing my best to blog throughout my time here.  They live in the boonies and don’t have the best internet access.  My hope is to give you a daily recap each day.  It’s only through Monday and then it’s back to my normal blogging habits, so please bear with me!

Throughout the day I munched on snacks I packed from home … a Granny apple, carrots sticks, Wasa crackers and a Luna bar.  I never find any appetizing airport food, so snacks were neccessary for today. 

After surprising my dad (fun!) and spending some time catching up, we headed out to dinner at Habaneros, a great little Mexican eatery.

I started with this whopper –

A Dos Equis Amber with a salted rim in a perfectly icy glass!

For dinner, I decided on a Vegetable Quesadilla, stuffed with bell peppers, mushrooms, onions and Mexican cheeses – 

On the side, I ordered a bowl of frijoles

I ended up picking apart most of the quesadilla since it had way too much cheese.  I’m not a huge, huge cheese person, so I requested for them to go light with the cheese, but it still had a ton.  I can’t imagine what the regular serving would have been like!!

Now we are back home, lounging about and relaxing.  I don’t know what the plan is for tomorrow, but I do have my running shoes and a good run is in order!  Knowing my mom, I’m sure shopping is in order too! 🙂

Tricks Up My Sleeve

Good Wednesday Morning!  Happy Humpday!

Since it is the week of ‘Trick-or-Treat’, I thought I would pull out a few tricks of my own.  No, not yet … you will just have to wait and see … hee hee ha ha! 

This morning’s breakfast was back to a good eatin’ bowl of granola

With some Kashi Heart 2 Heart, extra raisins and bananas mixed in.

I have another question this morning … (I just love seeing all your answers!!)

If you eat a cold cereal for breakfast, what is your top pick?

Lost & Found

So, I ended up having quite a busy day … after 40 minutes with weights, I jumped in the shower and from there headed out on some errands.  I was home in time for a quick lunch and couldn’t find a thing that sounded tempting to my taste buds …

I started with this –

 

A heaping bowl of broccoli slaw with black beans, corn, jalapenoscarrots, ff feta, plain Chobani, hot sauce and pumpkin seeds on top.

I enjoyed it, but it didn’t hit any spots … hmm … not sure what to have next … how about one of these – 

 

 

I really made a mistake by trying to rush through lunch and not making myself a well-rounded meal.  I had to leave again right after eating, so I didn’t want a bunch of dishes to wash.  Lazy me. 😥

 

Before I left for GOTR, I snacked on a bowl of Kashi with raisins and vanilla almond milk

 

 

To please the husband, I planned one of his favorite meals for dinner …

BBQ Chicken and Black Bean Pizza

A while back, I purchased TJ’s whole wheat pizza dough, portioned it into 4 smaller balls, then rolled it into individual-sized pizzas.  I pre-baked all four crusts and used two of them that night.  The remaining two were frozen … until tonight.

I warmed up both crusts in a 425 degree oven for 8 minutes.  Each pizza was topped with BBQ sauce, shredded chicken, black beans, sliced onions and mozzarella cheese.  Baked in the oven for 10 minutes, until cheese is melted, and VOILA!  Dinner is served!

We also had a leafy green salad with broccoli slaw, carrots and cucumber

Success!  For the first time since breakfast, I feel satisfied!  What was lost has now been found!

I posed a question about breakfast habits this morning and wasn’t at all surprised to see your answers.  I already knew that you were all too brilliant and fantastic to go without your morning eats!  Kudos to you!

Breakfast Is My #1

Good Morning!  I’ve really noticed over the past week how much darker it is when I wake … another tell-tale sign that our winter is just ahead.  It’s really not helping me leap out of bed in the mornings either!! 🙂

 

I was craving a piping hot bowl of oats this morning and was eager to use the last bit of pumpkin that we had …

Flavors of Fall Oats

Included in this morning’s bowl:

  • 1/3 cup each oats and soy milk
  • 1/2 cup H2O
  • 1/2 sliced banana
  • 1/4 cup pumpkin
  • Generous sprinkle of pumpkin pie spice and cinnamon
  • 1 tsp. vanilla
  • Toppings: wheat germ, sf syrup, raisins and pumpkin seeds

Preparation:

Combine oats, water, milk, sliced banana, vanilla and spices in pot; cook over medium heat, stirring frequently to help break up the banana.  When oats reach desired consistency, stir in pumpkin.  Turn off heat and allow to sit covered for one minute.  Spoon into bowl, add toppings and enjoy!

I couldn’t have wished for a better bowl to start my day!  The syrup was a new addition, one in which I really enjoyed.

I was thinking this morning about how much I look forward to starting my day off with a great breakfast.  I can’t even imagine stepping out my front door without taking the time to enjoy this very important meal.

So, my question is this … do you eat breakfast each and every day or do you sometimes skip it?  If so, why?

Every Day

I wanted to take some time and care with writing this very special post, so I apologize for the tardiness … I am super appreciative and elated at the special honors I have received. 

 

 

On Sunday, the FAB.U.LOUS Julz, over at Simple and Divine, presented me with this award and much bloggie love.  I am so honored to receive this great recognition, especially since I have not been around for very long. 

I knew that I was embarking on an adventure when I started this blog.  What I didn’t know was that I was going to become a part of an AMAZING community full of caring and supportive people …

Every day a new encouraging comment awaits me and leaves a smile on my face. 

Every day I read the daily doings of someone I’ve never even met and feel excited for them as they share their story. 

Every day I am challenged to turn my thoughts into words to present to those that anxiously await. 

Every day is a new day with new ideas, new experiences and new encounters.

Blogging has become a part of who I am.  I always knew I had a lot to say verbally … I’m always blabbing about one thing or another (poor Devin), but I never knew that I would find such joy in expressing myself through words.  The fact that I can base all my words around my love of cooking and my love of fitness make it that much better!

So, I thank you, Julz, for passing on the best award eva!  And to all the amazing blog readers out there, THANK YOU for being there each and every day.  I am truly blessed to have this opportunity to say how much your kind words mean to me!
