The Two “B’s”

There are plenty of great combinations starting with the letter “B” – bold and beautiful, big and brawny, black and blue, bubbly and bright.  Well, tonight’s two “B’s” aren’t as exciting as those.  My “B” combination has to do with tonight’s dinner, which was bland and boring.  Argh.

Allow me to explain …

I was originally planning to make lentil soft tacos for din din this evening, but had a change of heart this morning and decided to swap the lentils for tilapia and make fish tacos instead.

I browsed through Ellie’s cookbook to see if she had a special recipe for these tasty tacos, and by-golly, she did!


Fish Tacos with Chipotle Cream Sauce


Her recipe can be found here.  I made the chipotle cream with Greek yogurt exactly as written in her directions.  That’s where the similarities ended.  I went on my modification bender again and decided to make the fish my way.

I sprinkled the fillets with salt and pepper, then I dipped each piece in egg whites and Panko bread crumbs.  I cooked on the stove top in a skillet with a small amount of oil, flipping once, until cooked throughout.

Well, I obviously didn’t use enough S&P, or most came off when I dippedeach piece in the egg whites, because the fish was super bland.  No flava at all!!

The rest of the taco was ok – I don’t think I really care for the taste of the adobo sauce, which is how I purchased the chipotle peppers.  The best part, in my humble opinion, was the homemade guacamole that I whipped together this afternoon.  Guacamole is good stuff!

Here’s what I used to make our guacamole tonight:

  • 1 ripe avocado, diced
  • 1 roma tomato, diced
  • Chopped onion
  • 1 tsp. jarred diced jalapenos
  • Lime juice
  • Salt and pepper

I’m terrible about measuring things – I always just judge by look and taste, so that’s what I would recommend if you give this recipe a shot.  Squirt some lime juice in the bowl with the vegetables, add some salt, give it a good stir, take a little taste and go from there. 

It’s also best to allow it some time to chill in the fridge before serving to allow the flavors to blend.

The 2nd “B” – boring – comes from the fact that I completely forgot to plan a side for our tacos!!  Hello McFly?!  Luckily, we had TJ’s Multigrain tortilla chips in the pantry that went perfectly with the guacamole!

I guess having a light dinner just means that I can have a couple extra pumpkin cookies for dessert!!  😉

Since I brought up pumpkin, I have to mention that MacDuff left me a comment earlier that really made me laugh out loud … she was wondering how many cans of pumpkin I go through in a month.  Hahaha!  It’s true … I can eat my weight in pumpkin!  Love the stuff!  Actually, it’s not as many cans as one would think … a lil’ bit of pumpkin can go a long way!!

BTW, if anyone has a killer fish taco recipe, please pass it on … I would love to give them a second (more tasty) chance.
