Day Done Gone

Wow.  I can’t believe Monday is almost gone.  What happened to this day?!  I have nothing to show for my time today.  I don’t think I got much of anything accomplished.  I was kind of in my own world, I guess.

I putzed around on the internet for a good chunk of the morning, finalizing up my plan for Christmas day brunch.  I also made my trip to TJ’s and Lowe’s Foods for all the essentials.  I worked out.  By the way, I started a Weekly Workout page about 3 weeks ago and that’s where I’ve tracking all my workouts.  Just so you know. 

That’s it??  Well, I also made dinner, but that doesn’t really count.  What happened to the other 11 hours I have been awake?  Oh well.  ‘Tis the season, I guess.  Brain fart.

So, I’m gonna make the rest of this quick since I’m enjoying cuddle time with my fancy man.  He’s watching the game, but rubbing my feet.  I don’t let these times go to waste.  Feel me?  I love to have my feet rubbed.  Feels so good.


Pistachio-Goat Cheese Baked Chicken

So easy to prepare …

Preheat oven to 375 degrees. Slather both sides of boneless chicken breasts with Dijon mustard. Press crumbled goat cheese and chopped raw pistachios into one side of breasts. Place in PAM-sprayed baking dish, cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5 minutes.
