Tag … You’re It!

Hola peeps!  So, yesterday I was tagged twice to reveal seven random facts about me.  I was tagged by the lovely Allison, at Green Dog Wine and also the fantabulous Caitlin, over at See Bride Run.

Ok, folks, are you ready for my BIG reveal?!

  1. I have a super nose!  I smell everything … and I mean EVERYTHING!  You ate garlic two nights ago – I can smell it.  Had onions on your salad at lunch – I know that too.  Enjoyed a little drinky drink – know it!
  2. I shave my legs every single day without fail.  Religiously.  If I am late, oh well … I will still shave and just be late.
  3. I can sing along with quite a few Eminem songs.  I’m the REAL Slim Shady.
  4. I have two left feet.  I am the clumsiest person you will ever meet.  I run into everything and have banged my head more times that I can even count.
  5. I was walking by the time I was 10 months old.  Too bad that didn’t help me with the clumsiness!
  6. When I first met Devin I told him I was 21 so I could go out with him and his friends.  (I was actually still 19!!  Bad girl!)
  7. I’m a mutt – mostly made up of Norwegian, German and Swedish.

Bonus facts (since I was tagged twice):

  1. I am double-jointed in my fingers – I can bend each finger at the top knuckle.  It’s actually kinda gross!
  2. I was named after a cheerleader that my mom knew in high school.  They weren’t great friends, but she thought she was always so bubbly and outgoing.
  3. I was never a cheerleader … sorry mom!

Ok, straight on to my eats for the day …

I was at my in-law’s for lunch today and my dad-in-law whipped out the leftovers from Sunday’s party … a.k.a. more ham!!!  I’m good with the ham for a while.  We still have some left from what we brought home and I’m transferring it to the freezer tomorrow.

My lunch plate –

I left their house around 3:00 and ran some errands.  I ate this guy while I was buzzing around –

I did a quick workout this afternoon, consisting of 20 minutes on the treadmill and 25 minutes with weights. 

My legs felt pretty tired tonight, so I don’t know if they would have been able to do much more than that anyways.  I’m glad I did it though … I was trying to talk myself out of it!! 😳

African Chicken and Vegetable Soup

Ingredients:

  • 2 boneless chicken breasts, pre-cooked and shredded
  • 4 cups reduced sodium chicken broth
  • 1 medium sweet potato, diced
  • 1/4 cup diced onion
  • 1 sliced carrot
  • 1 celery stalk, sliced
  • 1 tsp. minced jalapeno
  • 1/2 tsp. cumin
  • 1/2 cup medium salsa
  • ~3/4 cup black beans, drained and rinsed
  • ~1/4 cup PEANUT BUTTER

Preparation:

In large soup pot, combine broth, sweet potatoes, onion, carrot, celery, jalapeno, cumin and salsa.  Simmer until vegetables are tender.  Add  shredded chicken, black beans and peanut butter; stir well and simmer for a few additional minutes, until thoroughly heated.

I had seen several soup recipes in the past that included the addition of PB, but I just wasn’t sure how it would fly.  It works!  It was really good … gave it more of a Thai taste in my opinion (and Devin’s too!) 

I actually hid the addition of the secret ingredient from him until he convinced me that he really liked it … I was afraid that if I told him ahead of time that it had PB in it, he would make assumptions beforehand.

I am really sleepy tonight and think I will curl up in bed.  I really wanted to catch up on some blog reading, but I’m afraid it will have to wait until the AM.  I’m just zonked.
