Hello fabulous people everywhere!  Ahh … where do I begin?  I have missed you so, after being away from my computer since this morning!

I didn’t leave myself anytime to blog this morning after Veggie Girl got me hooked on Google Reader.  Um, hello … what world have I been living in?!  Obviously one that is in super slow-motion.  I had NO idea Google Reader was going to open up a whole new way of life for me!!  Thanks Veggie Girl – YOU are the queen chica! 😀


Ok, let me give you a little play-by-play of my day …

After getting so wrapped up in Google Reader, I panicked when I realized I hadn’t yet eaten, so I flew downstairs and scarfed down a delicious bowl of granola with sliced bananas and wheat berries as fast as I could –


Yum yum to the tum.  Panic subsided.

Even though I was a little behind, I made sure to get in a full workout with weights, totaling 45 minutes.  Normally my strength training days are T and Th, but this week I decided to change it up and go M, W and possibly, F.  I used to strength train 3 days a week, but have gotten out of the habit.  I’ve been thinking of going back to three again … we’ll see.

When I was done I whipped up a protein shake with a scoop of my daily Green Vibrance


Most days I can stomach my daily greens mixed alone with juice and then there are days when it just has to go incognito.  8)


My homegirl, Amy, had the day off from work today, so guess who played hooky?!  Oh yeah.

Another guess … can you figure out where I wanted to go for lunch??  Well … whatcha got?

Here’s what I crammed into that bowl of goodness:

  • Spinach/romaine
  • Cherry tomatoes
  • Cauliflower
  • Sliced mushrooms
  • Baby carrots
  • Bean mixture – garbanzo, kidney and soy
  • Pickled okra (anyone else??)
  • Sprouts
  • Apple slices
  • Dried cranberries and raisins
  • Sun-dried tomato feta

After lunch, we buzzed around town for a little while longer before she had to leave for her masssssage appointment.  Lucky girl.

I was able to get some additional things done while out and about.  I didn’t end up getting home until almost 6 o’clock, then I chatted with my main squeeze for a while before starting on dinner –

I found this recipe while perusing the Food Network and it happens to belong to the barefoot lady.


Here’s how I put it all together …


(For two)

  • 1/2 cup dry lentils
  • 2 carrots, sliced
  • 1 large celery stalk, sliced
  • 1/2 cup chopped onion
  • 1/2 cup sliced mushrooms
  • 3/4 cup chicken broth
  • 1 tbsp. tomato paste
  • 1 tbsp. red wine vinegar
  • EVOO
  • S&P
  • 2 salmon fillets


In a large heat-proof bowl, pour boiling water over lentils to cover and allow to sit for 15 minutes; drain and set aside.  Heat a small amount of oil in skillet, add onions and cook for ~10 minutes until translucent.  Add mushrooms and cook for 2 minutes.  Next, add lentils, carrots, celery, broth and tomato paste to skillet; cover, reduce heat and simmer for 20 minutes.  Add vinegar and season to taste.

Preheat oven to 450 degrees.  Rub oil, S&P over salmon fillets.  Heat oven-proof skillet over high heat for 4 minutes.  Lower heat to medium-high and place salmon in skillet, seasoned side down.  Cook for 2 minutes, undisturbed, until very brown.  Flip fillets and place skillet in oven.  Cook for an additional 8 minutes or until fish flakes easily with a fork. 

Spoon lentil pilaf onto place and place salmon fillet on top.  Enjoy!




I really, really enjoy lentils and for some reason, I always forget about making them.  This one scored big time in this household and really was pretty simple to make with a little prep work ahead of time.  So easy, in fact, that I had most of the dishes I dirtied cleaned up before we even sat down to eat.  Love that!

We also had a chopped salad with spinach, carrots, celery and mushrooms –



We are now trying to figure out what was making scratching noises over our heads while we were eating dinner.  I am praying a little critter hasn’t wriggled it’s way in between our first and second floors.  That sounds like a headache I don’t want to deal with right now.  As I mentioned before, we have a protected preserve behind our house, so we’ve seen it all pass by … deer, raccoons, mice, snakes, spiders, owls, a random kid every now and then.  You get the point.

Cocoa-Nutty Oats

Morning!  I’m excited to report that we are heading out for the day … we are taking a spur-of-the-moment hiking trip to South Mountain State Park.  We love to hike and the weather today will be just perfect for getting lost in the mountains (not really!)

Last night after dinner, I decided to dig into the box of Chocolate Decadence cereal I bought at TJ’s last week … let me just say, YUM YUM YUM!!  This stuff is dangerous!  I sprinkled a little bit over a small scoop of vanilla frozen yogurt with light chocolate syrup

And, well, this morning I had to dig into the box again … for Cocoa-Nutty Oats

The combination today included:

  • 1/3 cup each oats and soy
  • 1/2 cup water
  • 1/2 banana
  • Salt & cinnamon
  • 2 tbsp. spelt berries
  • ~3/4 scoop Muscle Milk Light Dark Chocolate Protein Powder
  • Topping – coconut and Chocolate Decadence

I liked it, but it was WAY too rich and sweet for breakfast.  I feel like I’m headed for a sugar coma!!  It also turned kind of runny … from the protein powder??  I don’t know, but I wouldn’t think so.  Hmm …

Anyways, I think I would enjoy a small amount of this as an after-dinner treat instead of for breakfast.

As for the Chocolate Decadence – thumbs way up!

I’m off to get ready for our hike … we always like to take a picnic lunch, so I need to scrounge some things up!!

Orange And Greens

If there was any benefit to not working out yesterday, it was that it replenished my energy level.  I blasted through a 5-mile run today and could have kept going … for time’s sake, I stopped.

A big reason why I have a weight training day between my cardio days is because I’ve found it makes me better, faster and stronger.  It allows my body to refuel and pumps me up mentally for my next workout.

When I got home, I made the protein shake I had been waiting for since I finished breakfast.

Devin opened a new container of MM Light Banana Crème and an idea popped into my head (all thanks to a delicious sounding iced coffee I saw on Carrots ‘N’ Cake’s blog.) 

Banana Hazelnut Crème

(1 scoop of banana protein powder with 1/2 cup leftover hazelnut coffee)

… with Green Vibrance.  Blah!  It definitely ruined the color and for the most part, ruined the taste.  Oh well, at least I got it in for the day!

I put down half an orange before my run and had the other half when I returned. Here’s a fun idea for your leftover peels …

Throw orange peel and any leftover rind into pot with enough water to cover. Add whole cloves and any other spices (cinnamon, nutmeg and allspice are all great!) Set heat on the very lowest setting, checking the pot from time-to-time to add additional water if needed.

Your whole house will smell WONDERFUL!!

Ok, that’s my bit of knowledge for the day … on to lunch!

I wanted to use some of the leftover hummus, so I decided on a toasted pita sammie with leftover rotisserie chicken

I also had a great salad (note the snow peas) and a blueberry Chobani

Snack Attack

Hey all!  I’m back from GOTR and I have some time to spare before I meet my friend, so I thought I would blog quick about my snacks this afternoon.  Yes, snacks is correct – it’s one of those kinds of days!

Before I left for the school, I was feeling a little empty so I downed a protein shake.  Today’s creation was Dark Chocolate-Cinnamon-Banana with a hearty scoop of Green Vibrance.

I used one scoop of Dark Chocolate Muscle Milk Light, 1/2 cup water, 1/2 cup FF almond milk, 1/2 banana, 2 ice cubes and a hefty dose of cinnamon.  It was tres yummy – very cinnamony.

I almost don’t even notice the taste of the Green Vibrance anymore.  I don’t know how anyone could take their daily scoop with plain water.  I think it would make me gag.  I can’t really even do juice with it anymore.  I much prefer it in a shake/smoothie of some sort.

After GOTR, I knew that I better have something to nosh on or I would inhale all types of badness at dinner.  I opted for a snack of celery, carrot, raisins and a spoonful of almond butter

Delish!  I’m enjoying my decision to change up my snacks every now and then.  Don’t get me wrong – I could never stray too far from my fav Builder’s Bar, but a little variety now and then will be good for me. 🙂

Raccoon Eyes & Raisin Fingers

That’s what you get when you swim for an extended period of time.  It took me a total of 75 minutes to get good and soggy.  Yep, I met my goal swim time today.  Yeah me! 🙂

I noticed on my drive home that my fingers were still wrinkly from being in the pool and once out of the shower, I took a good look at the goggle indentations around my eyes that make me look like I haven’t slept in a week!  How in the world do swimmers do it?!

Anyhow, I had a GREAT swim today!  Instead of losing steam around 45 minutes, I actually felt like I was going stronger.  I had a good talk with one of the pool staff members and she gave me some tips on improving my stroke.  Boy, was she right – I’ve been paddling my heart out with shorter strokes instead of long, smooth strokes.  I had no idea that I was doing this, so I’m super glad she was there to help me out!

As soon as I arrived home, I went right for the blender and protein powder for much needed fuel –

Today’s flavor was Muscle Milk Dark Chocolate … with a scoop of Green Vibrance, of course.

I had a huge craving for a salad for lunch and was happy to find a lot of great veggies hiding out in the fridge.  Today’s creation included the following:

  • Spinach base
  • Carrots
  • Celery
  • Grape Tomatoes
  • Broccoli Slaw
  • Yellow Squash
  • Cubed Mango
  • Blue Cheese Crumbles

I added two Rye Wasa Crackers on the side, plus a great bowl of steamed green beans with crumbled tempeh –

This combination was a spur of the moment decision and it actually turned out really well!

I’m off to get dinner into the crockpot.  I love using the slow cooker for meals – it makes life so easy!

Gas Pains

Pain at the gas pump is what I am talking about.  For some crazy reason, we have a gas shortage here in both Carolinas.  Most gas stations are out of gas and those that have gas, have a mile-long line of cars waiting to fill up.  Is this not the craziest thing ever??  I heard on the radio as I was driving 30 miles out of my way to get gas that the rest of the country is not having a shortage.  What’s going on here?!?

Anyways, I’ll stop my ranting.  My tank is full and eventually I made it back home to eat lunch.  I was beyond starving by the time I got home since my 20-minute gas run turned into an 1 1/2 hour journey.  Ok, really, I’ll stop now ….

I had a protein/greens shake after weight training this morning.  I went ahead and took a picture of it this time to show you that I wasn’t fibbing when I said previously they normally weren’t very attractive –

See what I mean?!  I just close my eyes, grin and bear it.  The Green Vibrance is loaded with so many good things that I am willing to give up the look/taste for the health benefit.

On to lunch …

I shoved the last few broken pieces of TJ’s Pretzel Slims in my mouth as soon as I walked in the door.  Didn’t have time for a photo on those! 😦


I threw lunch together as fast as I could.  This is what I came up with:

  • Sandwich with toasted whole wheat bread, pesto, fat free cream cheese, roasted grape tomatoes, spinach leaves and a slice of TJ’s low salt turkey
  • 2 carrot sticks
  • Combo of vanilla/plain Chobani with 1/2 peach and granola

It’s already time for GOTR … gotta run!

Late Lunch = Hodge Podge

I had a GREAT run!!  For a change of scenery, I drove to a nearby greenway that has a paved trail and mile markers.  I am actually really glad that I waited to run because the sunshine felt so good on the skin along with the slight cool breeze in the air.

The sky was so pretty that I just had to snap a quick pic before heading out!   

I totaled 7 miles and felt completely exhilarated when I was finished.  On the drive home hunger started churning in my stomach, so upon arrival I quickly made a protein shake. 

Today’s creation was Mocha Banana –

  • 1 scoop dark chocolate protein powder
  • 1/2 banana
  • 1/4 cup leftover coffee from this morning
  • 1 scoop Green Vibrance
  • 3/4 cup water

All blended with some crushed ice. 

The shake did the trick since I knew that I would have to shower before I could start on lunch.  Hunger pains gone … and they stayed gone until 3:00!

Even at 3:00 I didn’t feel very hungry, but knew I needed to get some calories in me.  I decided on a random hodge podge plate –

  • Sliced tomato with salt & pepper
  • Carrot sticks
  • Slice of light brie
  • TJ’s Pretzel Slims
  • Perfect peach

Plus, a strawberry Chobani with 1/2 tbsp. ground flax and sliced almonds –

I’ve got some dried navy beans soaking to cook up later, possibly to include with dinner tonight.  Plus I STILL have some squash left!  Maybe I should whip up a batch of soup??

I also pulled out a can of chick peas that was hiding in the pantry.  I think I will make some red pepper hummus – yum!

It’s a low-key weekend for us with no set plans.  Unless something comes up, we will be dining in tonight and hitting the couch with another movie.  Ah, the good life … 😛
