Reuben Turned Rachel

Hola peeps.  How in the heck are ya?  I’m back in the swing of things.  Finally.  Thank goodness.  It snowed again over night and we ended up with about an 1-1/2 inches covering the ground.  The temps never got very high today, but the sun kept on shining and melted all the snow away.  Now – no snow, but it’s FREEZING!!  Brrrrr.  I am so ready for Spring.  I can’t even stress it enough.  I’m just not a cold weather person.  At all.  I should just give up and move to the Caribbean.  Oh yeah.


Grilled Rachel Sandwiches



To kick off our normal eating habits again, we went with a good ol’ classic sammie.  It was delicious and hit the spot perfectly. 

You know the drill with this one …

  • Whole Grain Rye
  • Homemade Thousand Island Dressing
  • Swiss Cheese
  • TJ’s Reduced Sodium Turkey Breast
  • Chopped Sauerkraut
  • Sauteed Onions
  • Spicy Brown Mustard

Grilled to perfection.  Yum.  Have I ever mentioned my love of sauerkraut?  It’s actually rather embarrassing … I fancy it so much that I have been known to stab a forkful right from the can and eat it stone cold.  That’s pretty bad, huh??  It must be my German roots coming out.  That one’s for you, Gramps! 😉


I’m ready to snuggle like a bug in a rug and watch LOST.  New episode tonight.  It’s actually on right now.  We’ve got a trick with the DVR though … if we start watching 1/2 hour after the show comes on, we can forward through all the commercial breaks.  Genius, right?!  Haha.

Let’s Just Call It “EBLT”

Hey all you snazzy peeps.  This is going to be another quicky ‘cuz I’m super sleeps AGAIN tonight.  The cat decided that it was time for her breakfast way, way, way too early this morning and started launching herself upon us at an obscene hour.  Devin just kept right on snoozing away … I think a freight train could roll over him and he wouldn’t wake up.  I, on the other hand, was up like a light bulb.  BING.  So, what do I do??  I get up, feed the princess and start writing about barley.  Ahh, the life of a foodie, I swear.


Dinner tonight was as easy-peasy as it gets …

EBLT  -or-  Egg, Bacon, Lettuce and Tomato Sandwich

Late Realization

This morning, after posting our eventful evening last night, I dashed into the kitchen to see what sounded appealing for breakfast.  Neither granola or oats were making any impression on me, so I opted for a toasted TJ’s muffin


I got the idea of pumpkin and PB (but I used almond butter) from Gliding Calm and it really is amazing!  It’s a much different taste than the pumpkin butter since you are not getting that extra sweetness.  To beef it up a bit, I added 1/2 mashed and microwaved banana.  Yum yum!

Once I was finished with that, my appetite for cereal returned, so I had a small bowl of Grape Nuts with the remaining 1/2 banana.  Sorry I didn’t take a picture – my bum was glued to the couch! 😉

It wasn’t until about 1:00, after showering and getting dressed, that I finally admitted to myself that I was suffering from a hangover.  I was in deep denial all morning and had convinced myself that I was just tired.

Once the truth hit me, I was immediately STARVING and needed nourishment stat!  I rushed Devin out of the house and we headed to my all-time fav lunch spot – Jason’s Deli!!!

I felt completely sucked dry of all nutrients so a huge salad chock full o’ veg was just what the doctor ordered –


That seemed to give me a little of my normal spark back, which I needed in order to fight the crowds out and about today.  For his birthday, I got Devin new winter golf clothes (windpants and windbreaker), plus new workout shorts and some other little things.  The golf clothes didn’t work out, so we took those back and also ran a couple of other errands … including a trip to Sam’s Club where I picked up a huge container of spinach for the week.  Love spinach and have missed it this past week!

For dinner tonight, we both agreed on a classic sammie …

Turkey Reubens with Baked Sweet Potato Spears


Nothing out-of-the-ordinary here … rye bread, turkey, spicy brown mustard, kraut, caramelized onions, Swiss cheese and, of course, thousand island dressing


I made the dressing from scratch since, as you know, I’m not a huge fan of bottled dressings.  It’s super easy – ketchup, vegan mayo, sweet relish, lemon juice, minced onion, vinegar and black pepper.  I didn’t measure anything out – just added to the bowl until I felt I got it right.

The sweet potato spears were from TJ’s, found in the produce section.  I finally got them right this time! 

Every time I’ve tried to make these, they’ve always burned.  This time I was determined to succeed, so I figured it best to lower the temperature and just cook longer if needed.  I tossed the spears with 1/2 tbsp. olive oil, salt and pepper, then spread on a baking sheet and baked in a 350 degree oven for 30 minutes, flipping halfway.  I also broiled for a few minutes to get a bit of a crisp.  They were great!

As I am blogging, we are watching You Don’t Mess With The Zohan.  I gave up after the first 5 minutes and powered up the computer.  It’s getting a few chuckles from Devin here and there, but in my opinion, the worst movie made this year.  Oh well, at least I can just lay here and relax on the couch before crawling into my nice ‘n comfy bed! 🙂

Plain And Simple

Howdy!  Tonight’s post is going to be plain and simple … just like our dinner!  I am super whooped – the lack of sleep has finally caught up with me! 😉

 I met my friends at Brixx Wood-Fired Pizza, where we sat outside, ordered a round of beers and enjoyed the perfect fall weather.

I ordered the Brixx Sampler – my choice of any four of their draft beers …

From left to right: Blue Moon, Carolina Blueberry Wheat, Carolina Strawberry Blonde and Unibroue Ephemere.  I declared two of them as winners – the Unibroue had a great Granny Smith apple taste and the Strawberry Blonde had, of course, strawberry tones.

Since we had absolutely NOTHING in the refrigerator for dinner (I froze the leftover pasta), I decided to run into the grocery store and see what I could find.  I ended up grabbing a rotisserie chicken that was half price.  We had half a loaf of two-seed bread left from last night, so chicken sandwiches made the menu.

I shredded the chicken, added green chiles, bacon and shredded Mexican cheese to the bread loaf, then I popped it under the broiler for a few minutes. 

I topped my sandwich with a spoonful of salsa for a little extra kick –

We also had a side of edamame and half slice of leftover Mexican pizza –

Definitely nothing fancy, but it hit the spot.  I really wasn’t all that hungry.  My huge breakfast kept me full all day.  The beer helped as well!

Sorry to cut this so short, but it’s time to crawl into bed and catch up on my sleep!  Night!

Quick Fix

I didn’t have anything planned for dinner tonight (gasp!) because I didn’t think we would be home tonight.  Since we ate out last night, we decided to eat-in and grab a movie.  Lounging on the couch sounded pretty good after dodging the crowds at the mall today!

I couldn’t think of anything on the spot that I could whip up, so we decided to run up to the grocery store to see if anything caught our eyes.

Luckily we found a lone rotisserie-style turkey breast waiting under the heat lamp at 1/2 off.  Then and there I knew it was going to be ANOTHER sandwich meal (which is fine with me – I was in the mood for quick and easy tonight since by this time it was almost 8:00.)

We grabbed a multigrain baguette and a bagged Asian salad mix and headed to the checkout. 

After scrounging in the fridge we came up with this great combination for our baguette sandwiches –

  • Turkey breast
  • TJ’s light Brie cheese
  • Tomato slices
  • Spinach leaves
  • Raspberry Walnut Vinaigrette dressing

I toasted the bread in the oven and put together the sandwiches, while Devin made our salad.

The Asian salad included snow peas, cranberries, wonton strips and an Asian dressing –

We picked up 88 Minutes with Al Pacino at a Red Box rental station – gotta love $1.00 movie rentals!

After the movie, it’s off to bed – we have a fun day planned with Devin’s family tomorrow.

Dine And Dash

It’s 7:00 pm and I am finally getting a chance to post lunch.  I am so sorry for the delay.  We left the house as soon as lunch was done for a shopping trip for some new fall clothes!

I spent some time on the treadmill and ending up running a bit over 4 miles – thanks to an episode of Dexter … it’s really getting good!

With such a late breakfast, we didn’t get hungry for lunch until 2:00 and decided a quick meal of sandwiches would do the trick.

I picked up a packet of Starkist Tomato & Pesto Tuna Creations at the grocery last week, so we decided to give that a try.  The verdict: it was REALLY good!  The flavor is great and you could end up using this tuna for a number of different meal creations. 

Along with the tuna, our sandwiches contained navy beans (mixed with the tuna), cilantro pesto, a shmear of cream cheese, sliced tomato, sliced avocado and spinach.  We also had carrot sticks and 1/2 of the Asian pear

The pear was really good – it had a bit of crisp like an apple, but the taste of a pear.  Liked it and will look to buy again!

Ok, now I need to get dinner together … where has this day gone?!

Gas Pains

Pain at the gas pump is what I am talking about.  For some crazy reason, we have a gas shortage here in both Carolinas.  Most gas stations are out of gas and those that have gas, have a mile-long line of cars waiting to fill up.  Is this not the craziest thing ever??  I heard on the radio as I was driving 30 miles out of my way to get gas that the rest of the country is not having a shortage.  What’s going on here?!?

Anyways, I’ll stop my ranting.  My tank is full and eventually I made it back home to eat lunch.  I was beyond starving by the time I got home since my 20-minute gas run turned into an 1 1/2 hour journey.  Ok, really, I’ll stop now ….

I had a protein/greens shake after weight training this morning.  I went ahead and took a picture of it this time to show you that I wasn’t fibbing when I said previously they normally weren’t very attractive –

See what I mean?!  I just close my eyes, grin and bear it.  The Green Vibrance is loaded with so many good things that I am willing to give up the look/taste for the health benefit.

On to lunch …

I shoved the last few broken pieces of TJ’s Pretzel Slims in my mouth as soon as I walked in the door.  Didn’t have time for a photo on those! 😦


I threw lunch together as fast as I could.  This is what I came up with:

  • Sandwich with toasted whole wheat bread, pesto, fat free cream cheese, roasted grape tomatoes, spinach leaves and a slice of TJ’s low salt turkey
  • 2 carrot sticks
  • Combo of vanilla/plain Chobani with 1/2 peach and granola

It’s already time for GOTR … gotta run!
