Sleepy Surprise

Do you ever fall flat asleep, say on the couch, and wake up with a start, not knowing where you are?!  Well, sleepyhead did just that last night.  After cleaning up dinner, I sat down on the couch and within five minutes I was out cold.  Devin said he tried to wake me a couple times and I wasn’t budging … so, he left me.  Not for the night, he’s not that cruel – he eventually just went upstairs to piddle on the computer.  I woke up about 10:00 and I had no absolute idea what was going on.  I felt like I missed the bus or something.  It took a few seconds for the panic to subside and then I peeled my bum off the couch and walked zombie-like up to my bed.  Ahh …






I don’t think you can tell from the picture, but I busted out the pumpkin again.  It seems like it has been so long.  After I started taking on an orange hue in November, I thought it might be time to put it away for a lil’ bit.  Now you know I’m pulling your leg about the orange-y glow, but I sure do love my pumpkin … in everything.

Breakfast was the usual – warmed granola, 1/2 sliced banana, flax, wheat berriessoy, spoon of PB … and pumpkin.  Delish.  Ya know, I have really taken to warming my cereal.  It becomes very, very similar to a warm bowl of oatmeal when heated.  Loves it.





I’m sure this is what you expected from me the day after a “casserole” type meal … lunch was leftover pot pie and a huge popeye (aka spinach) salad with fresh veggies and lima beans.  I actually have one more serving on the pot pie … I have a lunch date with my hub, so it probably won’t get eaten today, but you will see it again soon enough.  Just in case you haven’t had enough.


Our dinner last night was our good ol’ stand-by, Taco Salad.  Devin actually requests this meal, this and pizza, so I make all attempts to appease.  He doesn’t request any other meals that I make though, those are the only two.  I’m sure that’s a surprise (ha) … I think I would fall off my chair if he asked for something like Amaranth Pilaf with Lentils and Kale.  Yeah.  That’ll be the day.




If you want to see my how-to with this dish, just click on “Taco Salad” in the Tag Cloud to the right.  It’s really quick for me to whip together on a busy night.  Instead of my normal black beans, I used chickpeas since I made a huge batch on Sunday.  I really enjoyed the extra crunch they gave to my dish.  My picture is sans cheese … I totally forgot about it until I sat down with my plate.  A little sprinkle was adding before I chowed down, believe you me.

Does anyone else have a stand-by meal that they make several times a month?  Please share … I may be pestering you for recipes, as well.  😀

Angel On Your Tree?



Not long ago, Santa was getting ready for his annual trip, but there were problems popping up everywhere.

Four of the elves got sick and the trainee elves did not produce the toys as fast as the regular ones, so Santa was beginning to feel the pressure of being behind schedule.  On top of that, Mrs. Claus told Santa that her mother was coming to visit through the New Year.  Grrr.

This stressed Santa EVEN more!  As he went to harness the reindeer he found that three of them were about to give birth and two had jumped the fence, out heaven knows where?!  More stress.

And then, when he began to load the sleigh, one of the boards on the sleigh cracked, causing the toy bag to fall to the ground, scattering all the toys.  Extremely frustrated, Santa went into the house for a cup of coffee and a shot of whiskey.

That’s when he found that the “sick” elves had hit the liquor cupboard and there was nothing left to drink.  In all his frustration he dropped the coffee pot, breaking it into hundreds of little pieces all over the kitchen floor.  He went to get the broom, only to find that mice had eaten the straw it was made from.

Just then the doorbell rang.  Royally peeved at this point, Santa cussed all the way to the door.  He opened the door to find a little angel with a great big Christmas tree.

The angel said, “Hello, Santa!  Where would you like me to put your Christmas tree????”

And that, my friends, is how the little angel came to be on top of the Christmas tree.

One of our old standards was on the menu for tonight … actually, this was last night’s dinner that was put on hold for Monday Night Football.

Our fiesta included the following goodies:

  • Romaine/spinach base
  • Ground turkey
  • Black beans
  • Frozen/thawed corn 
  • Halved grape tomatoes
  • Shredded mozzarella cheese
  • Homemade tortilla chips – bake at 350 degrees for 10 minutes, flip and continue baking 3-4 minutes
  • Salsa and plain Chobani

It was just as delicious as always.  Definitely a favorite in this household.

Fashion Forward

I love fashion!  It’s so fun to play dress up … not that I got to play, but wishful thinking never hurts! 🙂


Ok, now to the food … this is snack/lunch/dinner all in one, so I will try my best not to go on and on …

As I was running out the door, I was already pretty hungry and I didn’t think it would be appropriate for me to shovel my lunch in my mouth with other people present, so a pre-lunch snack was in order –

A perfect little Chocolate Chip Z-Bar hit the spot!

When I arrived at the luncheon, my mother-in-law was waiting for me, drink in hand – isn’t she great?! 

I really enjoyed my very, very rare mid-day Bloody Mary cocktail!  It was spicy too, which I love in a Bloody Mary.  The only bummer was the lack of fun garnish!  No celery, olives or pepper-rimmed glass!  Boo.

It seemed like it took forever for the lunch to be served – I was SO glad I had that Z-Bar or my crabby side would have come out.

It was really good!  I loved the addition of lentils, which you don’t see very often when dining out. 

I also had about 3/4 of this very white-floury roll


I didn’t take any pictures during the fashion show, but here is the scoop that I have on the hot fashions for fall:

  • Animal prints
  • Tweed
  • Red, red, red – and any shade close to red (burgundy, maroon, cherry, etc.)
  • Ruffles … yes, ruffles – that’s not a typo
  • Leggings/Tights
  • Plaids

You are saying to yourself right now, “that sounds like last year??”  Yes, correct, very similar.  I guess we don’t have to renew our entire closets, ladies!  And, to the fellas, I’m sorry I don’t have the men’s fashion scoop – this was solely ladies.

I didn’t have anything really pressing today, so I decided to spend the rest of the afternoon with my MIL.  She had to return a purchase to Pier One, so I went along and we hit a few other stores as well.  We had a great day together!

I somehow managed to get a splitting headache while we were out, so we made a pit-stop at McD’s for a caffeine boost –

I think it’s really good!  Unfortunately it didn’t help the headache though! 😦


Now to dinner …

Chicken Taco Salad was the meal plan for tonight.  As I’ve mentioned the last time we had it, this is one of our favorite dinners.  We normally make it with ground turkey, but for a switcheroo, we had shredded chicken.

After I prepare all the toppings, everything gets set out like a buffet, so we can each make our own just the way we like it.

Tonight, my toppings included:

  • Romaine/iceburg base
  • Shredded chicken
  • Black beans
  • Corn
  • Tomatoes
  • Avocado
  • RF shredded cheese
  • Plain Chobani
  • Hot sauce
  • Homemade tortilla chips


Thankfully after eating my headache went away!  Hopefully it won’t come back when we watch the debate tonight!  Ha!  I’m getting to my breaking point with all the politics …

Dinner Fiesta

I did some work through the afternoon and got hungry for a snack around 4:00, so I dug into our stash of Builder’s Bars.  I swear we buy them like they are going to run out! 

Just as the label says, these bars are cocoa dipped double decker crisp goodness.  Yum yum.

Later, I met up with my friend, Bobbie, that I haven’t seen in ages.  It was a blast – we gabbed for two hours and hadn’t even realized so much time had passed.

I wasn’t sure what I wanted to drink when I sat down … after all, it was 1/2 price martini night!  But then I looked over to the bar and saw Sam Adams Octoberfest on tap!  Fall really is here!  I ordered one of those and snapped a shot about 1/2 way through –

I got home around 7:45 and immediately started on dinner.  I had originally planned a new recipe for tonight, but knew that I would be home late and decided to put it off until next week.  One of our favorite meals is Taco Salad and it’s super easy to put together, so that was the new plan.

I pre-baked a few whole wheat tortillas earlier in the day.  First, I cut them into 1/4’s and then onto a cookie sheet they went.  They were baked at 350 degrees for 8 minutes, then flipped and baked an additional 5 minutes, until crispy.

The rest of the salad went like this –

(For two)

  • 1/2 lb. ground turkey
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/4 avocado, diced
  • Handful grape tomatoes, halved
  • Jalapenos, from the jar
  • Reduced Fat Shredded Cheese
  • Chobani Plain Yogurt
  • Romaine base

Devin and I love the reality show, Big Brother.  The last episode (where they announce the winner) was last night.  We didn’t get a chance to watch it so we are going to settle in and watch tonight.  I wonder who the winner will be??  Memphis or Dan?
