Black & Blue

Hi everyone!  Happy Black Friday!!  Anyone get out there early as a bird to do some super sale shopping?!  I browsed through all the ads yesterday, but I didn’t see anything that was worth dragging my bum out of bed in the wee hours of the day. 

A few years ago I was standing in line at Target around 5:30 AM to be one of the first in the store when it opened at 6:00 AM.  Of all places I could have chosen at that hour, I ended up standing outside in the dark, freezing cold to get into Target … the irony is that it’s the one place I visit several times each and every week at any time of the day I please.  After all, it’s just a mile from our house.  Crazy lady.

After my blog marathon this morning, I was feeling rather cranky from all the technical difficulties I was encountering, so I flipped off the computer and haven’t looked at it again until now.  I feel like I am super behind on reading and commenting, but I’m hoping to make up for that this weekend since we should be pretty low-key both days.

I always enjoy getting the house ready for Christmas the weekend following Thanksgiving.  Staying true to this tradition, we pulled out all of our Christmas decor from the attic, plus we strung lights up outdoors on the bushes.  It was a perfect day to play outdoors since it was nearly 60 degrees!  I know I’ve said it before, but it’s really hard to believe it is almost December!!

Rewinding to breakfast, I decided to switch things up a bit (but not too much – it’s still cereal, just not granola) and settled in with a bowl of 1/2 cup Grape Nuts, 1/2 cup Kashi H2H and raisins

We decided around lunchtime to pull ourselves together and get out in the hustle bustle to get some errands done.  Before we left, lunch was in order –

We still have plenty of leftovers from yesterday, but I just wasn’t feeling it.  This was just perfect.  

After our running around together, I decided to do some solo running … on the treadmill!  I was still feeling rather blue so I knew I needed to pound it out.  A good sweat always seems to lift my spirits!

A good hunk of pizza does a good job of lifting my spirits as well!  Since I still wasn’t in the mood for leftovers, we decided to head out to Wolfman’s Pizza for a bite to eat and a sippy treat –

I think it’s time to retire for the evening … as you can probably tell from my tone (or lack of) I’m just not feeling up to the game today.  It’s like a roller coaster … oh, how lovely it can be sometimes!  Ha!  Sleep tight, mis amigos!

CT Strikes Again!

Hola!  What’s shakin’, bacon?!  So, I decided to change it up a lil’ bit for brekkie this morning –

Ha.  Gotcha, didn’t I??  I actually did make a change … I added blueberries to my warm cold cereal mush.  Mmm … it really has grown on me.  I’m lovin’ it. 

This bowl included: granola, ground flax, diced banana, frozen blueberries, vanilla soy and a spoon of PB.

I spent a good chunk of the morning looking for my Swiffer sweeper that I hid away months ago.  We weren’t using it at the time and I was having one of my freak-out cleaning moments, so I stashed it in the garage and forgot about it.  I have torn this house apart the last two days trying to find it – I looked through the garage (several times, not just a quick glance, mind you) and I was even in the attic trying to track it down.  I swear Dev was starting to look at me like I had a tail growing out of my backside.  I was on the prowl. 

I finally gave up and declared that I was just going to buy a new one … at that moment, I just could not live without it.  Although a little frantic, this gal still had her priorities – I had to get my strength training workout in before I hustled out to the nearest Target. 

While in the garage, on my second set of bum-numbing squats, I looked casually over to my left … lo and behold, there was that freakin’ Swiffer.  Yep, there it was in all its glory.  As plain as day.  Smug as can be.  I must have stared right at it during my various raids.  Well, I showed him who was boss … I immediately snatched it up and threw it in the house.  One would have thought that it was going to make a break for it.

Ya know, for someone that detests anything even remotely close to mopping, I was sure in a frenzy over that darn cloth pad on a pole.  What’s going on here?!

Since I had leftover tofu from last night, I figured I might as well make the best of it.  I don’t know who’s blog I saw it on recently – I have read so many great posts – but someone gave me the idea to slather buffalo sauce on my tofu slices.  Whoever you are … please reveal yourself!  You are an absolute genius!!  It was fantastic … with a crunchy topping, of course!

It’s a very sad, gray day here … I wish it would just rain already.  Actually, I wish it would just dump a big pile of snow on us.  I could be up for a snow day.  I’ve got a new baking sheet just dying for a spin down that big hill in the backyard.  Ha … I’m joking of course.  That’s a criminal offense in this house.  Anything that belongs in the kitchen is off limits.  But, golf clubs as ski poles … now, that would be some fun!!!  Just kidding, dear.

 

After confessing my undying love for my granola this morning, it almost goes without saying that I enjoyed a great bowl for brekkie –

For once, the finished product!!

 

I was feeling confident that the deliciousness would not wear off while I was busy snapping shots, so I forged ahead and added a small amount of milk, nuking it in the micro and mashing/mixing.

Today’s combo included:

  • 3/4 cup granola
  • 1 tbsp. ground flax
  • 1 chopped banana
  • 1 spoon pumpkin butter
  • ~1/2 cup vanilla soy
  • 1 spoon peanut butter

This new trick is really starting to grow on me.  I definitely think less milk is better – not as soupy and more porridgy.  I stayed full for a whopping 4 hours!  It even held through a 4-miler.  It’s something about the 4’s, I guess?!

But, boy, by the time hunger struck, it struck hard.  Lukily, I had a bunch of stuff in the fridge ready to throw together in a jiffy –

  • Spaghetti squash (pre-cooked last night)
  • 1 tbsp. tomato paste
  • Broc slaw
  • Diced roma tomatoes
  • Diced sweet potatoes
  • Leftover crunchy tofu
  • Goat cheese

I heated/cooked all the veggies in the microwave, then sprinkled goat cheese on top.  I re-heated the tofu in a small pan on the stove to get it to crisp up again.  One the side, I sliced a lone two-seed roll that was lounging in the fridge and slathered it with apple butter before eating.

I’m With The Band

Ahhh … I have FINALLY made it back to my beloved computer.  I think I was starting to suffer from withdrawals after being gone for so long.  My fingers were itchin’ for some action!

Last night, a friend’s band was playing their first gig at a local bar, so I joined in the festivities.  Since my hub was out-of-town last night, I went solo, but luckily had my fav girl, Amy, right by my side (plus a lot of other great friends!)  😀

 

We arranged to meet up beforehand at her place … she supplied the drinks –

And since I was going to be home alone, she offered to let me bunk at her place.  Felt like a teenager again … until the headache kicked in this morning!  That’s when I remembered I was no longer a teenager, but an adult trying to re-live her younger days of, you know, partying like a rock star.  I am friends with the band, after all.  Isn’t that what you’re suppose to do?!

Actually, the headache wasn’t alcohol induced (and, no, I’m really NOT in denial this time!) since I only had a few drinks.  I think it was caused by the overly-smoky bar.  My throat was scratchy after 30 minutes in the joint and still feels quite dry this afternoon.  Aargh.

For breakfast this AM, I dug in Amy’s pantry and came up with this –

The temps are pretty chilly around here, so I’ve been just lounging about the house.  It’s all good though – I have plenty to do around here … floors that need scrubbing, granola that needs to be baking, toe nails that need to be painted – you know, all the important stuff! 😉

I still feel like I’m running a bit on empty, so I’m also hoping the elliptical machine will put some pep back in my step.  Not just yet though … I’m quite content at the moment, thank you very much.

For lunch, I went with a repeat BBQ tofu sammie, this time with sweet potato rounds, in lieu of the butternut –

To View Or Not To View

STOP!!  I must warn you … if you like The View talk show, skip over this part and go right to the food! 🙂

To be frank, I don’t care for the bunch of cackling hens – I have no ill feelings against any of them as individuals, but as a group, they just drive me right up the wall when they are all screaming and yelling at the same time. 

When I’m not looking, they tend to sneak onto the TV and it only takes mere seconds for their voices to be embedded in my brain for hours.   There is always so much talking going on ALL AT ONCE, that I can’t even hear myself think.  Needless, to say, this happened to me this morning … it was a mad dash to get the TV turned OFF!!

If you’ve never seen this show, here’s a little taste of what you’re not missing –

Now, I didn’t pick this video for the topic – just found one that was relatively shorter in length.  You don’t need much to see what I mean … how THEY even know what they are talking about after a while is beyond me?! 

Ok, lovelies, I’m off my horse and on to food!

I decided on another bowl of warm cold cereal mush for breakfast – yup, that’s my official name for it now.  As you know, I wasn’t extremely thrilled with it yesterday, but I think it kinda grew on me … and the best part – it left me full for hours!!

 

Pre-micro:

After this shot, I started mashing and mixing until I was pleased with the bowl of mush before me.  It worked well again today to keep me satisfied for an extra long time!  Think I found the golden ticket!

Since yesterday was a run day, I worked on strength training today – 45 minutes and I was strong like bull.

After cleaning my messy self up, I was super speedy to get my morning business wrapped up, so I could get on to better things like this …

Crunchy BBQ Baked Tofu is my favorite way to enjoy tofu – plus it’s super easy to whip together …

Press tofu between paper towels for at least 20 minutes (I left mine this way overnight.)  Slather BBQ sauce over the tofu and dip each piece into Panko bread crumbs.  Bake in a 375 degree oven for 45 minutes.  I bake my tofu for a really long time – you may want to adjust this to your tastes.

To make the sammie, I used two slices of TJ’S WW Tuscan Pane, baby spinach, butternut squash spears and two slices of tofu

On the side, I had a chopped spinach/broc slaw salad with carrots, pom seeds and the last spoon of cottage cheese, plus 1/2 Honeycrisp apple (so delish!!)

As Gray As The Day

Ok, so my surprise tofu dessert didn’t turn out exactly the way I wanted it, but the actual flavor was great! 

By the time I was ready for my treat, I had gotten lazy and instead of popping it back into the oven to re-crisp the bread crumbs, I just nuked it in the microwave.  As I knew it would, the crumby topping was soft.

Here is what I rubbed on the tofu to make it dessert-like:

  • Agave Nectar
  • Cinnamon
  • Pumpkin Pie Spice
  • Panko Bread Crumbs

I baked it in the oven along with the BBQ tofu for almost an hour at 350 degrees.

My original plan was to have it with frozen yogurt and of course, the cinnamon twists from TJ’s … in the end, I decided on FF Redi-whip and a twist.  To find the crunch I desired, I made a “sandwich” of the three –

I already have a few ideas to turn this into another delish dessert dish, including the use of graham crackers and chocolate … stay tuned!!

Unfortunately, I am feeling as gray as the weather this morning … the left side of my throat is scratchy and my left ear is sore … uh oh.  I’m going to let my breakfast settle and take it easy this morning.  I am guessing that this feeling has to do with allergies.  I hope so anyways …

A bowl of granola with bananas, blueberries and ice cold vanilla soy was on the ticket this AM –

(Sans milk!)

In detail:

  • Heaping 3/4 cup granola (recipe found here: Homemade Granola)
  • 1 tbsp. ground flax
  • 2 tbsp. wheat berries
  • 1/2 banana
  • Handful of blueberries (frozen and rinsed with water to quick thaw)
  • Silk Light Vanilla Soy Milk

The cold milk felt good against my sore throat.  Man, oh, man … I hope this goes away soon!

Sheer Tofu Bliss

Hi all!  After 45 minutes with the weights, I started to think about lunch and decided to take out some tofu and get it ready for baking. 

Let me just tell you now … this new tofu idea I came up with is rockin’!!!  Not to toot my own horn or anything! 🙂

 

Actually, I did a search online afterwards and found several recipes out there with the secret ingredient, so I’m no inventor today!  Boo.

Drum roll please …

Crunchy BBQ Baked Tofu

The secret ingredient:  Panko Bread Crumbs!

I really love baked tofu, but always wish it had a little more outside crunch.  No matter how long I baked it, I never found the texture I was looking for.

I started thinking how I give other foods a healthy crunch and the light bulb went off … of course, breadcrumbs!  I can’t believe I didn’t think about it before!

After I sliced/pressed the tofu, I slathered it in BBQ sauce and dipped one side in bread crumbs.  I baked in the oven at 350 degrees for probably close to an hour (I told you I like it crispy!!)

Needless to say, this is my new fav for baked tofu … I even made a crunchy tofu dessert that I will reveal later tonight!

The rest of my sammie included a 1/4 mashed sweet potato and spinach on toasted whole grain bread

As you can see on the first pic above, I also had a sliced plum.  It was dry and not very good, but of course I ate it anyways!

I also whipped together a broccoli slaw salad from leftovers lurking in the refrigerator –

Other goodies in my bowl include:

  • Black beans
  • Corn
  • Avocado
  • Sliced grape tomatoes
  • Drizzle of Annie’s lite honey mustard dressing
  • FF feta cheese

Next time I make this I will need to use a bigger bowl – every time I gave it a stir, the broc slaw went flying everywhere!  Ha!

It’s time for me to buckle down and look over today’s GOTR lesson … I’m on my own today!  My co-coach has to take her girls to appointments.  Eek!  I’m scared!!
