Paint Me

Hey y’all!  How are ya doing today?  Happy Humpday … already!  Another week flies by in the blink of an eye.  I had a very productive “snow day” yesterday and in between staring at the TV, watching the inuguration to-do’s, I was also painting our laundry room.  You’re laughing, right?!  I’m serious about my love of painting.  I think I mentioned before that I had painted every room of our house myself, with the exception of the two-story foyer.  What I didn’t even think about was the bare walls in the laundry room.  As we were installing the new light fixture, it hit me. 

That’s when my itch to paint started again.  When I heard we had snow in the forecast, I ran like a kid to a candy store to the local hardware store to pick up my paint.  I actually just finished.  It look me quite a bit longer than I expected.  Good thing I didn’t have too much on the agenda today … I can’t be without the use of my washer and dryer for too long.  I’m also a laundry fanatic.  I always have a load going.  It amazes me the quantity of dirty clothes that two adults can produce!!

 

Anyways, on to the meal o’ the day …

 

 Spinach, Blue Cheese and Mushroom Stuffed Chicken Burgers

The highlight of these burgers was the bun, in both his + her opinions.  I started the dough early in the morning in the bread machine, shaped them into rolls and voila!  Nothing beats freshly baked bread.

Poppy & Pumpkin Seed Wheat Rolls

  • 1 1/3 cup water
  • 2 tbsp. butter, softened
  • 2 tbsp. honey
  • 1 1/2 cup bread flour
  • 1 1/3 cup whole wheat flour
  • 1 tsp. salt
  • 1 tsp. active yeast
  • 3 tsp. poppy seeds
  • 1/4 cup coarsely chopped pumpkin seeds

I always allow the bread machine to prepare the dough, so my preparation is as follows:

Place all ingredients in bread machine pan in order listed.  Set bread machine to “Dough” cycle.  Once complete, remove the dough, portion and shape into rolls.  Allow the dough to rise a second time.  Bake at 350 degrees for 15 – 17 minutes, until lightly browned.

 

Devin commented that these “burgers” weren’t really the burger he was expecting, so I promised him a real burger for the next time … fully loaded with cheese and bacon.  Just the way he likes it.  😉

I thought they were OK, but were definitely missing a flavor factor.  The George Foreman squeezed out most of the blue cheese, so that could possibly be to blame.  Oh well.  There’s always a next time …
